Chocolate Gateau

This is must definitely one of my family’s favorite chocolate cake, so easy to do that you can’t go wrong… it’s simply the perfect after school treat for your little ones…

  • this cake will serve about 6-8 peoples
  • 15 minutes prep
  • baking time 25 minutes.

Ingredients:

  • 70% cocoa chocolate ( preferably organic or good quality) 200 g
  • 4 Eggs
  • 125 g of butter
  • 200 g sugar
  • 100 g of flour
  • 1 tsp of baking powder

Preheat you oven at 180 .c

Melt your chocolate “Bain-marie” and ones it’s all melted add the butter to melt with it. ( cutting it in small pieces helps to melt quicker ) put it aside while mixing other ingredients.

in another mixing bowl whisk eggs and sugar together till it becomes light and fluffy, then incorporate the flour and the baking powder.

Then combine the chocolate mix to the batter, don’t over work it, just a gentle mix will suffice.

After greasing your tin and dusting it with a little bit of flour ( you can also use grease proof/ baking paper to avoid it sticking to the tin) pour the batter mix into your baking tin and place it in the center of your preheated oven for 25 minutes.

the aim for this cake is to be fondant in the middle… don’t worry if the center looks unbaked as it will set when cooling down, ones out… leave it to cool down till you can touch it without burning yourself.

enjoy it still warm as it’s even more scandalously tasty.

No ordinary wedding cake

I was so thrilled about this order, i lived it day and night.

One day in the mouth of march i gave a wedding cake consultation which i love doing… i sat  down with the mother of the bride only has  it was  a surprise. With paper and coloring pencils i started working with her ideas and my creativity… when she left my home she was very exited about what we had discussed and agreed on doing.

The theme was “trains and hand bags” the groom had a particular type of train he liked and for the bride it was the beloved designer hand bags.

these were very satisfying to make yet my eye sight probably gone worse since that day… working with very small objects can be freaky ! lot’s of patience is required.

Once again my painting skills were required, but this time not on a cake but on a canvas. it’s been years since i had touche paint.

I can now say that painting on a canvas is not the same thing as painting on a cake…  different technique is required. but for this project i found myself using all my skills and it was wonderful.

The effect of surprise was complete! the bride and groom didn’t want a traditional wedding cake and wanted it to be original ! it was a success, it became the center peace of the day 🙂

Alice in wonderland

Coming back to my blog after such a long time… so much has been going on!  lot’s of new projects finished and here i am sharing .

In the mouth of April i had two interesting orders to process, one was a party cake with the theme of  ” mad hatter”s party”. i then started to research and found lots’ of different ideas…this has been done so many times that there was plenty of inspiration out there.

Just to mention, this was my first ever figured fondant cake, i never worked with it before and i can say i really enjoyed it, learn a lot along the way… i was very happy to create something new and challenging.

the great thing about making fondant models, you can start your work weeks before it’s due, you make them and you wait till it gets hard, they still stay fragile but holds it shape perfectly. i really feel like i could push this hobby further. i used the shop bought icing  not from the local supermarket as the quality isn’t the same as the one bought from a professional cake shop.

If  i had to give an advise for backing … never cut corners, and always put in the top quality ingredients and it will show in the result.

Easy Bread Rolls

So, here I was think, what to make for lunch… the cupboards were bare. I had a left over Stilton and broccoli. Then I thought “soup and rolls”… so i had to find a way to make quick and easy bread rolls. Then I came up with this… it is the best bread roll I’ve ever made, they’re so easy and ready in 30 minutes… they’re so scrumptious that every excuse is good to make a batch.

Will you need:

Ingredients

  • 1 cup plus 2 Tbsp warm water  or  340g
  • ⅓ cup oil   or  113g
  • 2 Tbsp yeast
  • ¼ cup sugar  or  50g can be less
  • ½ tsp salt
  • 1 eggs
  • 2½ of white bread flour and 1cup of whole-wheat flour or about 300g of white and 100g of whole wheat.
  • Seeds (optional)

Instructions

  1. Preheat oven to 400 degrees gas mark 6
  2. In the bowl of a stand mixer or in a simple mixing bowl, combine water, oil, yeast, and sugar. Allow mixture to rest for 15 minutes in a draft free environment.  With a dough hook or by hand, mix in salt and eggs and 2 of the cups flour until combined. Add remaining flour ½ cup or 68g at a time.
  3. Its time to add your seed mix if you are using it. Incorporate them into the dough until smooth.
  4. Shape dough into 12 balls for a medium to small roll or 6 for bigger ones and let it rest for 10 minutes on a baking sheet covered by parchment paper.
  5. Bake at 400 degrees for 10 minutes until tops are golden brown.

enjoy these any time, for breakfast with any spread or jam you like, as a hot dog roll for a quick lunch or as a simple soup roll.

make your own: pizza dough

this recipe is truly amazing… no need to take the telephone to order a take out oily pizza or even buy one from the shops… to make your own will be healthier and will save you lots of pennies… so far i can only see advantages !

its simple you will need :

Pre heat your oven at 190C gas mark 5

375g (13 oz) plain flour

1 teaspoon salt

1 tablespoon sugar

7g (1/4 oz) dried active baking yeast

2 tablespoons olive oil

225ml (8 fl oz) warm water (45 C)

poppy , sunflower, pumpkin seeds ( optional)

Get your mixing bowl out mix in all your ingredients making sure you are not putting the yeast and salt together. Once you have a dough, bring it together and start to work your dough for 10 minutes, this will help the gluten to build up and make your dough nice and stretchy. This part is very much physical …so go ahead and put all your energy into it… you can always have that little extra guilt free slice after  😉

And this is the part that I absolutely adore … NO RISING TIME… yes you read right… absolutely no rising is needed

With the help of a rolling-pin roll your dough out of the size your like for a deep pan like size but if you like it thinner you can divide it in half and it will yield about 2 large pizza, then put on your base of tomato past and a nice layer of cheese ( can be cheddar, mozzarella, brie… what ever is your fancy) and start putting what ever else you like…  peppers, mushrooms, aubergines, ham, bacon, pineapples… list is endless be creative… 🙂

you will need to put you pizza(s) in the oven at 190 C gas mark 5 . Depending on your oven…  bake it for 15-20 minutes, a good tip to know if it’s ready the edges would be slightly golden brown.

Blueberry and lemon muffins

who here enjoy a good fresh muffin for breakfast? personally i do, and even more so when they come out the oven and eat them while they’re still hot… scrumptious

Generally when i wake up with a craving i got to satisfy it, if not i’ll go grumpy the whole day !                                                    That morning i got up and looked into my fridge and i had some left over blueberries from the smoothie made the day before… it took only a second to work out how they were going to be used has i always had lemons i thought about combining the two and creating something fresh

And here they were… ready in 30 minutes can you believe it. so here it is my recipe for these very simple breakfast muffins

you will need:

  • 1 egg
  • 175 g of sugar
  • 50 ml of oil
  • 275 ml of milk
  • grated lemon
  • 2 Tbsp of the juice of a lemon
  • 300 g of flour
  • 3 tsp of baking powder
  • 1 teaspoon of bicarbonate of soda
  • around 275 g of fresh blueberries

the reason why it’s simple…

  1.  Preheat your oven at 180 dc while mixing you ingredients
  2.  Combine your flour,baking powder and bicarbonate of soda together in a separate bowl. leave it on the side.
  3. Now take all the other ingredients and mix them together, egg, sugar, oil, milk, lemon zest and juice
  4. ones all done, mix in 1/4 of the dry mixture and mix it into the wet mixture adding progressively all of it. ones done add your fresh blueberries and mix it thoroughly.
  5. In a muffin pan put your muffin cases and with the help of two spoons, this will help for a no mess operation i find a table spoon to pick up the mixture and a tea spoon to slide it of the other is the best,fill you cases just over 3/4 up. Put it in your oven for 30 minutes depending on your oven. for me it take less. one thing to know if they’re ready it’s the color that needs to be a nice golden brown and a bouncy top if still not sure at this point with a skewer put it in the center and if it comes back clean their all done !

Tadaaaaa!!! you’ve done it !

on these i like to make a little lemon drizzle:simply put icing sugar in a bowl and put some of that left over lemon just in it mix it till you get a nice pasty/runny icing pour over the muffin and wait for it to eat… that’s only if you can 🙂

  • In today’s society we have alienated our self from our kitchen. Ladies we can make it an actual enjoyable moment, make it comforting rather then frightening… close the door, put a soothing music on and make you work tops doughy, it’s fantastic. Through food you can archive so many things; making people agree that wouldn’t otherwise and bringing family and friends together through your amazing craft of love.                             Trouble with our way of eating today is mainly related to our life style… we work hard come home and the last thing we want to do is going in our kitchen…yet we want food and we want it now… so what do you do? take out? The fine tip to have food all week long and not having to cook is to prepare and freeze. anything.  Doing this will benefit you in all sorts of ways, you wont have to cook when tired but yet will eat balanced meals, healthier then a take out and reap the deep satisfaction of a meal cooked entirely by yourself.                             Making most of your ingredient from scratch can have a real satisfying effect. Taste will obviously be affected in a good sens. make your own pizza dough, your own pastry for you quiche Lorraine your own burger buns down to nice cake thronging on your kitchen counter on a cake stand, the efforts required is so much less then the gratitude we get when eating it. Some people tho have the fear of getting those mixing bowls and whisks out…don’t be afraid, go ahead an throw yourself at it, you will learn from your mistake, but also i’m here to help you achieving stratifying bakes…  It wont take you more then 25 minutes to make a tray of delicious muffins or a layered cake, and just for that you will feel disproportionately good about yourself. Baking to me, it’s all about feeling good, that warm sweet smelling odeur in the whole house, leaving behind what ever day to day stressful job you have, put on you aprons and start dreaming ….
